Ingredients

– 1/2 cup cottage cheese

– 1/2 cup cream cheese, softened

– 2 teaspoons pickle juice

– 2 garlic cloves, crushed

– 1/2 teaspoon salt

– 1/2 cup dill pickles, finely diced

– 1 teaspoon chili flakes

– 2 teaspoons Dijon mustard

– 4 slices pastrami, diced

– 1/3 cup gruyere cheese, grated

– Handful of chives, finely sliced

Instructions

1. **Prepare the Dip Base:**

– In a food processor or blender, combine cottage cheese, cream cheese, crushed garlic, Dijon mustard, salt, and pickle juice. Blend until smooth and creamy.

 

2. **Incorporate Mix-Ins:**

– Transfer the creamy mixture to a serving bowl. Fold in most of the diced pickles, pastrami, chives, and grated gruyere cheese, reserving some for garnish.

 

3. **Garnish and Serve:**

– Top the dip with the reserved pickles, pastrami, chives, and gruyere. Sprinkle chili flakes over the top for added flavor and a hint of heat.

– Serve immediately with crackers, pita chips, or fresh vegetables for dipping.

– **No Food Processor?** If you don’t have a food processor, you can manually mix the cottage cheese and cream cheese until smooth, then stir in the remaining ingredients.

– **Substitutions:** You can replace cottage cheese with more cream cheese or use sour cream, mayonnaise, or Greek yogurt. For a different flavor profile, try using parmesan, Emmental, or cheddar cheese instead of gruyere.
