This quick and easy Shrimp Scampi with Linguine is a perfect weeknight meal, featuring tender shrimp sautéed in a garlicky lemon-butter sauce with white wine and fresh parsley. Tossed with linguine, this dish is light, flavorful, and ready in just 25 minutes.

 

Ingredients

– 12 oz linguine

– 1 lb large shrimp, peeled and deveined

– 3 tbsp unsalted butter

– 2 tbsp olive oil

– 4 cloves garlic, minced

– 1/2 tsp red pepper flakes (optional)

– 1/2 cup dry white wine

– Juice of 1 lemon

– Zest of 1 lemon

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1/4 cup chopped fresh parsley

– 1/4 cup grated Parmesan cheese (optional)

Instructions

1. Bring a large pot of salted water to a boil. Cook linguine according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.

3. Add garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

4. Add shrimp, season with salt and black pepper, and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.

5. Pour white wine and lemon juice into the skillet, scraping up any browned bits. Let simmer for 2 minutes.

6. Return shrimp to the pan, add the cooked linguine, and toss to coat.

7. Stir in the remaining 1 tablespoon of butter, lemon zest, and chopped parsley.

8. Serve immediately, garnished with Parmesan cheese if desired.

 

Notes

– Use fresh shrimp for the best flavor, but frozen shrimp can be used if thawed properly.

– Substitute chicken broth for white wine if you prefer an alcohol-free version.

– Serve with crusty bread or a side salad for a complete meal.
