For the Sponge Cake:

Instructions
- Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Make the Sponge: In a large bowl, whisk together flour, sugar, and baking powder. Add eggs one at a time, then stir in the melted butter, milk, and vanilla extract. Mix until the batter is smooth and well combined.
- Bake: Pour the batter into the prepared pan. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely on a wire rack.
- Prepare the Cream Filling: In a medium bowl, beat the cream cheese until smooth. In a separate chilled bowl, whip the heavy cream with the powdered sugar until soft peaks form. Gently fold the whipped cream into the cream cheese along with the lemon zest until well combined.
- Assemble the Cake: Once the sponge has cooled, slice it horizontally into two even layers. Spread the cream filling evenly over the bottom layer, then carefully place the top layer back on.
- Garnish & Serve: Optionally, decorate the top with fresh berries or sliced fruit and a light dusting of powdered sugar. Chill for at least 1 hour before serving to let the flavors meld.
