– 1 lb ground beef
– 1 tbsp olive oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 cup carrots, diced
– 1 cup celery, diced
– 1 can (14.5 oz) diced tomatoes, undrained
– 1 can (10.5 oz) cream of mushroom soup
– 1/2 cup sour cream
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 tsp dried oregano
– 1/2 tsp dried thyme
– 8 oz egg noodles, cooked and drained
– 1 1/2 cups shredded cheddar cheese
– 1/2 cup breadcrumbs (optional, for topping)
– 2 tbsp fresh parsley, chopped (for garnish)
1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula. Drain excess fat if needed.
3. Add the onion, garlic, carrots, and celery to the skillet. Cook for 5-7 minutes until the vegetables are softened.
4. Stir in the diced tomatoes, cream of mushroom soup, sour cream, salt, black pepper, oregano, and thyme. Mix well and let simmer for 5 minutes.
5. Add the cooked egg noodles to the mixture and stir until evenly combined.
6. Transfer the mixture to the prepared baking dish. Sprinkle shredded cheddar cheese evenly on top.
7. If using, add breadcrumbs on top for extra crunch.
8. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
9. Remove from oven, garnish with fresh parsley, and serve warm. Enjoy!
– For extra richness, substitute cream of mushroom soup with cream of chicken soup.
