A wholesome, hearty breakfast bake packed with fresh apples, grated carrots, and rolled oats. Lightly spiced with cinnamon and nutmeg, this dish is bound with eggs and milk for a warm, comforting start to your day.

 

Ingredients

– 2 medium apples, peeled and diced

– 2 medium carrots, peeled and grated

– 1 cup rolled oats

– 1/2 cup whole wheat flour

– 1/2 cup chopped walnuts (optional)

– 3 large eggs

– 1 cup milk (or almond milk)

– 1/4 cup honey or maple syrup

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground nutmeg

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.

2. In a large bowl, combine the diced apples, grated carrots, rolled oats, whole wheat flour, and chopped walnuts.

3. In another bowl, whisk together the eggs, milk, honey (or maple syrup), cinnamon, nutmeg, baking powder, and salt.

4. Pour the wet ingredients into the dry ingredients and stir until just combined.

5. Transfer the batter into the prepared baking dish and smooth out the top.

6. Bake for 35–40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

7. Allow to cool slightly before slicing and serving warm.

 

Notes

– For extra moisture, serve warm with a dollop of yogurt or a drizzle of extra honey.

– This bake can be made ahead and stored in an airtight container in the refrigerator for up to 3 days.

– Swap walnuts for pecans or omit nuts entirely for a nut-free version.
