Description

These protein-packed baked eggs are creamy, fluffy, and loaded with cottage cheese. Perfect for a healthy breakfast or brunch!

 


Ingredients

6 large eggs

1 cup (225g) cottage cheese

1/2 cup (50g) shredded cheddar cheese

1/4 cup (60ml) milk

1/2 tsp (3g) salt

1/4 tsp (1g) black pepper

1 tbsp (15ml) olive oil or butter, for greasing


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or butter.
  2. In a bowl, whisk together eggs, cottage cheese, cheddar cheese, milk, salt, and pepper.
  3. Pour the mixture into the prepared baking dish.
  4. Bake for 20–25 minutes, or until the eggs are set and the top is golden brown.
  5. Serve warm with toast or fresh vegetables.

Notes

Add chopped vegetables like spinach or bell peppers for extra flavor.

Store leftovers in the refrigerator for up to 2 days.
