6 large eggs
1 cup (225g) cottage cheese
1/2 cup (50g) shredded cheddar cheese
1/4 cup (60ml) milk
1/2 tsp (3g) salt
1/4 tsp (1g) black pepper
1 tbsp (15ml) olive oil or butter, for greasing
Instructions
- Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil or butter.
- In a bowl, whisk together eggs, cottage cheese, cheddar cheese, milk, salt, and pepper.
- Pour the mixture into the prepared baking dish.
- Bake for 20–25 minutes, or until the eggs are set and the top is golden brown.
- Serve warm with toast or fresh vegetables.
Notes
Add chopped vegetables like spinach or bell peppers for extra flavor.
Store leftovers in the refrigerator for up to 2 days.
