  • 2 large chicken breasts (boneless, skinless)
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional for spice)
  • 1 small red bell pepper, sliced
  • 1 small yellow bell pepper, sliced
  • 1 small green bell pepper, sliced
  • 1 small red onion, sliced

Instructions

  • Preheat Oven:

    • Preheat your oven to 400°F (200°C).
    • Lightly grease a baking dish or line it with parchment paper.
  • Marinate Chicken:

    • In a small bowl, mix olive oil, lime juice, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, pepper, oregano, and red pepper flakes.
    • Coat the chicken breasts evenly with this spice mixture.
  • Prepare Vegetables:

    • Toss the sliced bell peppers and onions with a drizzle of olive oil and a pinch of salt and pepper.
  • Assemble & Bake:

    • Place the seasoned chicken breasts in the baking dish.
    • Arrange the bell peppers and onions around the chicken.
    • Bake for 22-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
  • Rest & Serve:

    • Let the chicken rest for 5 minutes before slicing.
    • Serve with warm tortillas, rice, or salad, and garnish with fresh cilantro if desired.

Notes

  • For extra flavor, marinate the chicken for 30 minutes to 2 hours before baking.
