For the Biscuit Crust:

  • 1 can refrigerated biscuits (or use your favorite homemade biscuit recipe)

For the Sausage Gravy:

  • 1 lb breakfast sausage (pork or turkey)
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk (or milk of choice)
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon cayenne pepper (optional)

For the Topping:

  • 11 1/2 cups shredded cheddar cheese
  • 2 scallions, thinly sliced
  • Fresh parsley, chopped (optional garnish)

Instructions

  • Preheat & Prepare Crust:
    Preheat your oven to 425°F (220°C). Arrange the biscuits on a greased pizza pan or baking sheet. Gently press the biscuits together along the edges so they form a continuous crust. Bake for 8–10 minutes until the biscuits begin to set and just turn lightly golden.

  • Make the Sausage Gravy:
    In a large skillet over medium heat, crumble and cook the sausage until well browned. Sprinkle in the flour and stir well to coat the sausage; cook for 1 minute to remove the raw flour taste. Gradually whisk in the milk and continue stirring as the gravy thickens (about 5–7 minutes). Season with salt, black pepper, and cayenne (if using).

  • Assemble the Pizza:
    Remove the biscuit crust from the oven. Spread the warm sausage gravy evenly over the biscuits. Sprinkle shredded cheddar cheese on top.

  • Bake to Finish:
    Return the pan to the oven and bake for another 8–10 minutes until the cheese is melted and bubbly.

  • Garnish & Serve:
    Remove from the oven and sprinkle sliced scallions and fresh parsley over the top. Slice and serve warm.


Notes

  • For a lighter version, try using turkey sausage.
