A refreshing twist on the classic BLT, these lettuce wraps combine creamy egg salad with crispy bacon and juicy tomatoes, all wrapped in crisp lettuce leaves. Perfect for a light lunch or snack.

 

Ingredients

– 6 hard-boiled eggs, peeled and chopped

– 1/3 cup mayonnaise

– 2 green onions, thinly sliced

– Salt and pepper, to taste

– 12 romaine lettuce leaves

– 12 slices cooked bacon, crumbled

– 24 grape tomatoes, halved

Instructions

1. In a medium bowl, combine chopped hard-boiled eggs, mayonnaise, sliced green onions, salt, and pepper. Mix until well combined.

 

2. Lay out the romaine lettuce leaves on a flat surface. Place 1 slice of crumbled bacon on each lettuce leaf.

 

3. Spoon the egg salad mixture evenly onto each lettuce leaf over the bacon.

 

4. Top each with halved grape tomatoes.

 

5. Optionally, garnish with additional salt and pepper to taste. Serve immediately.

 

Notes

– For a lighter version, consider using Greek yogurt instead of mayonnaise.

– Ensure lettuce leaves are thoroughly dried to prevent the wraps from becoming soggy.
