Blueberry Compote

A luscious and versatile blueberry compote with a perfect balance of sweetness and tang. Ideal as a topping for pancakes, yogurt, ice cream, or even as a spread for toast.

 

Ingredients

– 2 cups fresh or frozen blueberries

– 1/2 cup granulated sugar

– 1 tbsp lemon juice

– 1/2 tsp lemon zest (optional)

– 1/4 cup water (optional, for a thinner consistency)

Instructions

1. In a medium saucepan, combine the blueberries, sugar, lemon juice, and lemon zest.

2. If desired, add water to adjust the consistency.

3. Bring the mixture to a simmer over medium heat, stirring occasionally.

4. Reduce the heat to low and let it simmer for 8-10 minutes until the blueberries have burst and the compote has slightly thickened.

5. Remove from heat and allow to cool. The compote will thicken further as it cools.

6. Serve warm or chilled, as preferred.

 

Notes

– For a smoother texture, you can lightly mash the blueberries during cooking.

– Adjust the sugar according to the sweetness of the berries and your taste.

– Store in an airtight container in the refrigerator for up to a week.
