This Blueberry Cottage Cheese Breakfast Bake is a high-protein, low-sugar breakfast that’s both delicious and nutritious. Made with creamy cottage cheese, fresh blueberries, and wholesome ingredients, it’s perfect for a healthy start to the day.

Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1/4 cup chopped nuts (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a small baking dish.
  • In a blender or mixing bowl, combine cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Blend until smooth.
  • Stir in the rolled oats, baking powder, cinnamon, and salt. Mix well.
  • Fold in the blueberries and pour the mixture into the prepared baking dish.
  • Sprinkle chopped nuts on top, if using.
  • Bake for 30-35 minutes, or until set and golden brown on top.

 

  • Let cool slightly before serving. Enjoy warm!

Notes

  • This bake can be stored in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
