Description

Blueberry Peach Feta Salad is a refreshing and flavorful dish that combines the sweetness of ripe peaches and blueberries with the saltiness of feta cheese, all brought together by a tangy lemon basil vinaigrette. This salad is perfect for summer gatherings or as a light meal on its own.


Ingredients

  • 1 pint fresh blueberries
  • 2 peaches, diced
  • 2 Persian cucumbers, sliced
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped fresh basil
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  • In a large serving bowl, combine the blueberries, diced peaches, sliced cucumbers, and crumbled feta cheese.
  • In a jar with a lid or a measuring cup, whisk together the lemon juice, Dijon mustard, honey, olive oil, chopped basil, salt, and pepper until well combined.
  • Pour the vinaigrette over the salad ingredients and gently toss to ensure everything is evenly coated.
  • Taste and adjust seasoning if necessary.
  • Serve immediately or cover and refrigerate until ready to serve.

Notes

  • For a vegan version, omit the feta cheese and substitute honey with maple syrup. Adding chickpeas can provide extra protein and make the salad more filling.
  • This salad can be prepared a day in advance; however, for optimal freshness, add the fresh basil and feta just before serving.
