- 2 peaches, diced
- 2 Persian cucumbers, sliced
- 1/2 cup crumbled feta cheese
- 3 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard

- 1 tablespoon olive oil
- 1 tablespoon finely chopped fresh basil
- Kosher salt and freshly ground black pepper, to taste
Instructions
- In a large serving bowl, combine the blueberries, diced peaches, sliced cucumbers, and crumbled feta cheese.
- In a jar with a lid or a measuring cup, whisk together the lemon juice, Dijon mustard, honey, olive oil, chopped basil, salt, and pepper until well combined.
- Pour the vinaigrette over the salad ingredients and gently toss to ensure everything is evenly coated.
- Taste and adjust seasoning if necessary.
- Serve immediately or cover and refrigerate until ready to serve.
Notes
- For a vegan version, omit the feta cheese and substitute honey with maple syrup. Adding chickpeas can provide extra protein and make the salad more filling.
- This salad can be prepared a day in advance; however, for optimal freshness, add the fresh basil and feta just before serving.
