Description

A classic Ohio treat, Buckeye Bars capture the flavors of buckeye candy in a rich, fudgy bar form. These peanut butter and chocolate bars are delightfully sweet with a smooth, melt-in-your-mouth texture—perfect for satisfying your dessert cravings or serving at your next gathering.

For the Bars:

1 cup unsalted butter, softened

1 1/2 cups creamy peanut butter (plus extra for drizzling)

2 cups powdered sugar

1 teaspoon vanilla extract

For the Chocolate Drizzle:

2 cups semisweet chocolate chips

1/4 cup creamy peanut butter


Instructions

  • Preheat & Prepare Pan:
    Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.

  • Make the Base:
    In a large bowl, cream together the softened butter and 1 1/2 cups peanut butter until smooth. Mix in the powdered sugar and vanilla extract until fully combined and creamy.

  • Bake the Bars:
    Press the peanut butter mixture evenly into the prepared pan. Bake in the preheated oven for about 20 minutes until the edges are lightly golden. Remove from the oven and allow to cool completely.

  • Prepare the Drizzle:
    In a microwave-safe bowl, combine the chocolate chips and 1/4 cup peanut butter. Microwave in 30-second intervals, stirring in between, until smooth and fully melted.

  • Assemble:
    Pour the melted chocolate mixture over the cooled peanut butter base. Use a spatula or knife to create a marbled effect if desired. Chill in the refrigerator for at least 1 hour to set.

 

  • Serve:
    Once set, cut into bars (approximately 16 squares) and enjoy!


Notes

  • For a firmer bar, allow them to chill longer before cutting.
  • Ensure the base is completely cool before adding the chocolate drizzle to prevent it from melting into the bars.
  • These bars store well in an airtight container in the refrigerator for up to a week.
