- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sautéing for 2-3 minutes until softened.
- Add the carrots, celery, and zucchini. Cook for another 5 minutes, stirring occasionally.
- Stir in the diced tomatoes, beans, corn, vegetable broth, basil, oregano, salt, pepper, and bay leaf.
- Bring the soup to a boil, then reduce heat to low and simmer for 20-25 minutes.
- Remove the bay leaf, taste, and adjust seasoning if necessary.
- Serve hot and enjoy!
