Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add onion and garlic, sautéing for 2-3 minutes until softened.
  • Add the carrots, celery, and zucchini. Cook for another 5 minutes, stirring occasionally.
  • Stir in the diced tomatoes, beans, corn, vegetable broth, basil, oregano, salt, pepper, and bay leaf.
  • Bring the soup to a boil, then reduce heat to low and simmer for 20-25 minutes.
  • Remove the bay leaf, taste, and adjust seasoning if necessary.
  • Serve hot and enjoy!
