Ingredients
For the Cauliflower Steak:
- 1 large head of cauliflower (choose one with a solid core)
- 2–3 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 1/2 tsp smoked paprika (optional, for a hint of smokiness)
For the Mushroom Sauce:
- 8 oz mushrooms (cremini or button), sliced
- 1 medium shallot, finely chopped
- 2 cloves garlic, minced
- 1/2 cup vegetable broth
- 1/4 cup white wine (optional; substitute with extra broth if preferred)
- 1 tbsp soy sauce or tamari
- 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
- 1 tbsp olive oil
- Salt and pepper, to taste

Preheat & Prep:
Preheat your oven to 425°F (220°C). Remove the outer leaves from the cauliflower, trim the stem, and carefully slice it into 1-inch thick “steaks” (reserve any extra florets for another use). -
Roast the Cauliflower:
Brush both sides of the cauliflower steaks with olive oil and season with salt, pepper, and smoked paprika. Place the steaks on a baking sheet and roast in the preheated oven for about 25–30 minutes, flipping halfway through, until the edges are golden and the cauliflower is tender. -
Prepare the Mushroom Sauce:
While the cauliflower roasts, heat 1 tbsp olive oil in a large skillet over medium heat. Add the chopped shallot and sauté until translucent (about 2–3 minutes). Stir in the garlic and sliced mushrooms, cooking until the mushrooms are browned and have released their moisture (about 5–7 minutes).
Pour in the vegetable broth and white wine, then add soy sauce and thyme. Let the sauce simmer for an additional 5 minutes until it slightly thickens. Season with salt and pepper to taste. -
Assemble and Serve:
Place the roasted cauliflower steaks on a serving plate and spoon the warm mushroom sauce over the top. Garnish with a sprinkle of fresh thyme or parsley if desired. Enjoy as a hearty main course or as a unique side dish.

- For an extra burst of flavor, drizzle a little lemon juice over the finished dish.
