– 1 cup diced tomatoes (canned or fresh)
– 1/2 cup beef broth or water
– 1 cup shredded cheddar cheese (or Mexican cheese blend)
– Salt and pepper, to taste
– Optional: chopped fresh cilantro, sour cream, and jalapeños for garnish
1. Cook the pasta according to package directions until al dente. Drain and set aside.
2. In a large skillet, brown the ground beef over medium-high heat. Drain excess fat.
