Cheesy Onion Crisps are crispy, golden-brown potato slices topped with a savory blend of cheese and caramelized onions. A perfect snack or side dish, offering a delicious mix of flavors and textures.

  • 4 large russet potatoes, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 medium onion, thinly sliced
  • 1 tbsp butter
  • 1 tsp fresh thyme or rosemary (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, toss the potato slices with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Arrange the potato slices in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until the crisps are golden and crispy.
  4. While the potatoes are baking, melt butter in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-15 minutes, until the onions are caramelized and soft.
  5. Once the potato crisps are done, remove them from the oven and sprinkle evenly with cheddar and Parmesan cheese. Return them to the oven for 3-5 more minutes, or until the cheese is melted and bubbly.
  6. Top with the caramelized onions and garnish with fresh thyme or rosemary, if desired.
  7. Serve immediately as a snack or side dish.
