Chicken Parmesan Meatballs are a delicious twist on the classic Chicken Parmesan. Tender chicken meatballs are baked to perfection, topped with marinara sauce and melted mozzarella cheese. These meatballs are perfect for serving with pasta, on a sub roll, or enjoyed on their own with a side salad.

 

Ingredients

– 1 lb ground chicken

– 1/2 cup breadcrumbs

– 1/4 cup grated Parmesan cheese

– 1/4 cup chopped fresh parsley

– 1 egg

– 2 cloves garlic, minced

– 1 tsp dried oregano

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup marinara sauce

– 1 1/2 cups mozzarella cheese, shredded

– Olive oil for baking

Instructions

1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease with olive oil.

2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and black pepper. Mix until everything is well combined.

3. Roll the mixture into 12-14 meatballs, about 1-1.5 inches in diameter, and place them on the prepared baking sheet.

4. Bake the meatballs in the preheated oven for 20-25 minutes or until they are fully cooked and golden brown.

5. Remove the meatballs from the oven and spoon a little marinara sauce over each one. Top with shredded mozzarella cheese.

6. Return the meatballs to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.

7. Serve the Chicken Parmesan Meatballs with pasta, on a sub roll, or with a side of vegetables. Enjoy!

 

Notes

– For extra flavor, add a pinch of red pepper flakes to the marinara sauce.

– You can use store-bought marinara sauce, or make your own if you prefer.

– If you don’t have fresh parsley, dried parsley can be used as a substitute.

– These meatballs freeze well. After baking, let them cool and store them in an airtight container in the freezer for up to 3 months.
