Chicken Puttanesca is a delicious and bold Italian dish featuring pan-seared chicken breasts smothered in a rich, tangy tomato sauce filled with olives, capers, anchovies, and garlic. This flavorful sauce pairs perfectly with the tender chicken for a satisfying meal.

 

Ingredients

– 4 boneless, skinless chicken breasts

– 2 tbsp olive oil

– 4 cloves garlic, minced

– 1 can (14 oz) crushed tomatoes

– 1/4 cup Kalamata olives, pitted and sliced

– 2 tbsp capers, drained

– 4 anchovy fillets, chopped (optional)

– 1 tsp red pepper flakes

– 1 tsp dried oregano

– 1/2 tsp sugar

– Salt and pepper to taste

– Fresh basil or parsley for garnish (optional)

– 1/4 cup Parmesan cheese, grated (optional)

Instructions

1. Season the chicken breasts with salt, pepper, and a pinch of oregano.

2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden and cooked through. Remove from the skillet and set aside.

3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.

4. Add the crushed tomatoes, olives, capers, anchovies (if using), red pepper flakes, oregano, and sugar. Stir to combine.

5. Bring the sauce to a simmer and cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

6. Return the chicken breasts to the skillet and spoon the sauce over them. Simmer for an additional 5 minutes, ensuring the chicken is heated through.

7. Serve the Chicken Puttanesca with a sprinkle of fresh basil or parsley and Parmesan cheese, if desired. Serve with pasta or crusty bread.

 

Notes

– If you prefer a spicier dish, you can increase the red pepper flakes.

– For a lower-carb option, serve the chicken with steamed vegetables or zucchini noodles instead of pasta.

– You can substitute the chicken breasts with chicken thighs for a juicier, more flavorful option.
