These Chocolate Peanut Butter Haystacks are no-bake treats that combine crunchy peanuts with rich chocolate and creamy peanut butter for a perfect dessert or snack. Quick and easy to make, they’re ideal for satisfying your sweet cravings without turning on the oven.

Ingredients

  • 1 cup creamy peanut butter
  • 1/4 cup honey (or maple syrup for a vegan option)
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips
  • 2 cups rice cereal (gluten-free if needed)
  • 1/2 cup unsalted roasted peanuts, roughly chopped

 

  • Optional: extra mini chocolate chips for topping

Instructions

  • In a microwave-safe bowl, combine the peanut butter, honey, and vanilla extract. Microwave for 20-30 seconds until warm and easily stirred.
  • Stir in the chocolate chips until they begin to melt and create a smooth mixture.
  • Gently fold in the rice cereal and chopped peanuts until evenly coated.
  • Drop spoonfuls of the mixture onto a sheet of wax or parchment paper.
  • If desired, sprinkle additional mini chocolate chips on top of each haystack.

 

  • Refrigerate for at least 30 minutes to allow the haystacks to firm up before serving.

Notes
