These Cinnamon Cream Cheese Muffins feature a tender, cake-like base with a delightful swirl of rich, spiced cream cheese filling. Perfect for breakfast or an afternoon snack, they combine the warmth of cinnamon with the creamy tang of cream cheese for a truly comforting treat.

 

Ingredients

## Muffin Batter:

– 2 cups all-purpose flour

– 3/4 cup granulated sugar

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 1/2 teaspoon ground cinnamon

– 1/2 cup milk (room temperature)

– 1/3 cup vegetable oil

– 2 large eggs (room temperature)

– 1 teaspoon vanilla extract

## Cinnamon Cream Cheese Filling:

– 4 oz cream cheese, softened

– 1/4 cup granulated sugar

– 1 large egg yolk

– 1 teaspoon ground cinnamon

Instructions

1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.

3. In another bowl, combine the milk, vegetable oil, eggs, and vanilla extract; whisk until well blended.

4. Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix.

5. In a separate small bowl, beat the cream cheese, sugar, egg yolk, and ground cinnamon until smooth and creamy.

6. Spoon a small amount of batter (about 1 tablespoon) into each muffin cup.

7. Add about 1 teaspoon of the cream cheese filling to the center of each, then top with another layer of batter, covering the filling completely.

8. Bake in the preheated oven for 18–20 minutes or until a toothpick inserted into the center comes out clean.

9. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

 

Notes

– For an even swirl, you can gently pipe the cream cheese filling using a piping bag.

– Mix the batter until just combined to keep the muffins light and tender.

– Adjust the amount of cinnamon in the filling to suit your taste.
