Instructions

  • Prepare the Coconut Filling:

    • Refrigerate the can of coconut milk or cream overnight to separate the solids from the liquid.
    • In a food processor, combine the shredded coconut, solidified coconut cream, vanilla extract, and a pinch of salt. Pulse until the mixture is well combined and holds together.
    • Scoop tablespoon-sized portions of the mixture and roll them into balls. Place them on a baking sheet lined with parchment paper.
    • Freeze the coconut balls for about 30 minutes to firm up.
  • Prepare the Chocolate Coating:

    • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15-second intervals, stirring after each, until the chocolate is fully melted and smooth.
  • Assemble the Chocolates:

    • Remove the coconut balls from the freezer. Using a fork, dip each ball into the melted chocolate, ensuring it is fully coated.
    • Allow any excess chocolate to drip off before placing the coated ball back onto the parchment-lined baking sheet.
    • If desired, sprinkle with toasted coconut flakes or a pinch of sea salt before the chocolate sets.
    • Once all the balls are coated, refrigerate them for about 15 minutes to allow the chocolate to harden.
