– 2cans full-fat coconut milk(14oz each)
– 3/4cup sugar
– 1tsp vanilla extract
– Pinch salt
– 1cup shredded coconut (optional)
1. In a saucepan, combine the coconut milk, sugar, salt, and vanilla extract over medium heat, stirring until the sugar is completely dissolved.
2. Remove from heat and chill the mixture in the refrigerator for 2hours.
3. Pour the chilled mixture into an ice cream maker and churn for 20-25minutes until thickened.
