These Cottage Cheese Protein Brownies are a healthier twist on a classic treat. Packed with protein from cottage cheese and other nutrient-dense ingredients, they deliver a rich, fudgy texture without sacrificing flavor. Perfect for a post-workout snack or guilt-free dessert.

 

Ingredients

– 1 cup low-fat cottage cheese

– 2 large eggs

– 1/2 cup unsweetened cocoa powder

– 1/2 cup protein powder (chocolate or unflavored)

– 1/2 cup almond flour

– 1/4 cup honey or maple syrup

– 1/4 cup unsweetened applesauce

– 1 tsp vanilla extract

– 1/2 tsp baking powder

– 1/4 tsp salt

– Optional: 1/4 cup dark chocolate chips

Instructions

1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

2. In a blender or food processor, blend the cottage cheese and eggs until smooth.

3. Add the cocoa powder, protein powder, almond flour, honey, applesauce, vanilla extract, baking powder, and salt. Blend until fully incorporated.

4. Stir in dark chocolate chips, if using.

5. Pour the batter into the prepared baking pan and spread evenly.

6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

7. Remove from the oven and let cool in the pan for at least 10 minutes before cutting into squares.

 

Notes

– For extra fudginess, slightly underbake the brownies.

– You can substitute the protein powder with a flavor of your choice, but adjust the cocoa powder to maintain balance.

– Serve with a dollop of Greek yogurt or a drizzle of honey for added sweetness.
