For the Cookies:

  • 1/2 cup (115 g) unsalted butter, softened
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the Glaze (optional):

  • 1 cup powdered sugar
  • 23 tsp milk or cream
  • 1/2 tsp vanilla extract

Instructions

  • Preheat & Prep:

    • Preheat your oven to 350°F (175°C).
    • Line baking sheets with parchment paper.
  • Mix Wet Ingredients:

    • In a large bowl, cream together the butter, cream cheese, and granulated sugar until smooth and light in color.
    • Beat in the egg and vanilla extract until well combined.
  • Incorporate Dry Ingredients:

    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing to keep cookies tender.
  • Shape & Bake:

    • Scoop the dough by rounded tablespoonfuls onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake in the preheated oven for 10–12 minutes or until the edges are lightly golden. The centers may appear soft but will set as they cool.
    • Remove from the oven and let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Optional Glaze:

    • In a small bowl, whisk together the powdered sugar, milk (or cream), and vanilla extract until smooth.
    • Drizzle or spread the glaze over the cooled cookies. Allow the glaze to set before serving.

Notes

  • For a richer flavor, chill the dough for 30 minutes before baking.
  • These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • Experiment with adding a bit of lemon zest to the glaze for an extra burst of flavor.
