1 lb (450g) Italian sausage, casings removed
1 medium onion, diced
3 cloves garlic, minced
2 medium carrots, sliced
2 celery stalks, sliced
4 cups (1 liter) chicken broth
1 cup (240ml) heavy cream
1 cup (100g) grated Parmesan cheese
2 cups (200g) chopped spinach
1 tsp (5ml) dried oregano
Salt and pepper, to taste
2 tbsp (30ml) olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it into small pieces.
- Add onion, garlic, carrots, and celery. Cook for 5–7 minutes until softened.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Stir in the heavy cream, Parmesan cheese, spinach, and oregano. Simmer for another 5 minutes.
- Season with salt and pepper to taste. Serve hot with crusty bread.
Notes
Use spicy Italian sausage for extra heat.
Substitute kale for spinach if preferred.
