Creamy Parmesan Italian Sausage Soup

This rich and hearty soup features Italian sausage, tender vegetables, and a creamy Parmesan broth. Perfect for chilly nights, it’s a comforting one-pot meal that’s ready in under an hour!

 

Ingredients

Units Scale

1 lb (450g) Italian sausage, casings removed

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

4 cups (1 liter) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

2 cups (200g) chopped spinach

1 tsp (5ml) dried oregano

Salt and pepper, to taste

2 tbsp (30ml) olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it into small pieces.
  2. Add onion, garlic, carrots, and celery. Cook for 5–7 minutes until softened.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Stir in the heavy cream, Parmesan cheese, spinach, and oregano. Simmer for another 5 minutes.
  5. Season with salt and pepper to taste. Serve hot with crusty bread.

Notes

Use spicy Italian sausage for extra heat.

Substitute kale for spinach if preferred.
