- 3 large russet potatoes, cut into thin fries
- 2 tablespoons olive oil (or vegetable oil for frying)
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (adjust for spice level)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
Instructions
Prepare the Potatoes:
- Wash & cut: Scrub potatoes and cut them into thin fries.
- Soak: Place fries in a bowl of cold water for 30 minutes to remove excess starch. Drain and pat dry with a towel.
For Baked Fries:
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Season: Toss fries with olive oil and all the Cajun spices.
- Bake: Spread fries in a single layer and bake for 30–35 minutes, flipping halfway, until crispy and golden.
For Fried Fries:
- Heat oil to 350°F (175°C) in a deep fryer or heavy pan.
- Fry in batches for 3–4 minutes until golden brown. Drain on paper towels.
- Season immediately with Cajun spice mix.
Notes
- For extra crispiness, double-fry the fries: fry once at 325°F (163°C) for 3 minutes, then increase heat to 375°F (190°C) and fry again for 2–3 minutes.
- Store leftover fries in an airtight container and reheat in the oven at 400°F (200°C) for 5–10 minutes.
