Ingredients

Scale
  • 3 large russet potatoes, cut into thin fries
  • 2 tablespoons olive oil (or vegetable oil for frying)
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (adjust for spice level)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme

Instructions

Prepare the Potatoes:

  1. Wash & cut: Scrub potatoes and cut them into thin fries.
  2. Soak: Place fries in a bowl of cold water for 30 minutes to remove excess starch. Drain and pat dry with a towel.

For Baked Fries:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Season: Toss fries with olive oil and all the Cajun spices.
  3. Bake: Spread fries in a single layer and bake for 30–35 minutes, flipping halfway, until crispy and golden.

For Fried Fries:

  1. Heat oil to 350°F (175°C) in a deep fryer or heavy pan.
  2. Fry in batches for 3–4 minutes until golden brown. Drain on paper towels.
  3. Season immediately with Cajun spice mix.

Notes

  • For extra crispiness, double-fry the fries: fry once at 325°F (163°C) for 3 minutes, then increase heat to 375°F (190°C) and fry again for 2–3 minutes.
  • Store leftover fries in an airtight container and reheat in the oven at 400°F (200°C) for 5–10 minutes.
