A delicious and easy side dish featuring tender roasted squash with a crispy, golden parmesan crust. Perfect for a quick and flavorful addition to any meal!
– 2 medium yellow squash, sliced into 1cm rounds
– 2 tablespoons olive oil
– 50g grated parmesan cheese (about 1/2 cup)
– 1 teaspoon garlic powder
– 1 teaspoon Italian seasoning
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/2 teaspoon paprika (optional for extra color)
– 2 tablespoons breadcrumbs (optional for extra crispiness)
– Fresh parsley, chopped (for garnish)
1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
2. In a bowl, toss the squash slices with olive oil, ensuring even coating.
3. In a separate bowl, mix parmesan, garlic powder, Italian seasoning, salt, pepper, paprika, and breadcrumbs (if using).
4. Coat each squash slice with the parmesan mixture and place them in a single layer on the baking sheet.
5. Bake for 20-25 minutes, or until the squash is tender and the topping is golden and crispy.
6. Remove from oven and garnish with fresh parsley.

For an even crispier texture, broil the squash for an additional 2-3 minutes after baking. You can also use zucchini instead of yellow squash for a variation.
