A delicious, low-carb twist on traditional pizza that skips the crust. This casserole-style bake features a rich tomato sauce, melty cheeses, and a medley of vegetables (with an optional savory sausage addition), making it a hearty and healthy meal option.
• 2 cups tomato sauce (pizza sauce)
• 2 cups shredded mozzarella cheese, divided
• 1/2 cup grated Parmesan cheese
• 3 large eggs
• 1/4 cup heavy cream (or milk)
• 1 small onion, diced
• 1 cup diced bell peppers (mixed colors)
• 1 cup sliced mushrooms
• Optional: 1 lb ground Italian sausage, cooked and drained
• Optional: 1 cup fresh spinach leaves
• 1 tsp dried oregano
• 1 tsp dried basil
• Salt and freshly ground black pepper, to taste
1. Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
2. In a skillet over medium heat, sauté the diced onion, bell peppers, and mushrooms until they are tender (about 5-7 minutes). If using sausage, add it during the last 2 minutes of cooking; season with salt, pepper, oregano, and basil.
3. In a large bowl, whisk together the eggs and heavy cream until well combined.
4. Spread half of the tomato sauce evenly in the baking dish.
5. Layer with half of the mozzarella cheese, then add the sautéed vegetables (and spinach if using). If sausage is included, mix it in with the vegetables.
6. Pour the egg mixture over the layers, then top with the remaining tomato sauce.
7. Sprinkle the remaining mozzarella cheese and grated Parmesan evenly over the top.
8. Bake in the preheated oven for 25-30 minutes or until the bake is set and bubbly.
9. Remove from the oven and let cool for a few minutes before serving.
– For a vegetarian version, omit the sausage.
– Serve warm and garnish with fresh basil if desired.
