A festive twist on classic sugar cookies, these bars combine a tender, buttery cookie base with a colorful Easter egg surprise. Perfect for celebrating spring and the joy of Easter, they offer a delightful balance of sweetness and a playful crunch.
For the Sugar Cookie Bars:
• 2 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• 3/4 cup unsalted butter, softened
• 1 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1/2 cup milk
For the Easter Egg Topping:
• 1/2 cup mini chocolate Easter eggs or colored candy eggs
• Optional: Additional colored sprinkles for garnish
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
4. Beat in the egg and vanilla extract until well incorporated.
5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing until just combined.
6. Spread the cookie batter evenly into the prepared pan.
7. Bake in the preheated oven for 18-20 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
8. Remove from the oven and allow the bars to cool completely in the pan.
9. Once cooled, gently press the mini Easter eggs into the top of the bars and, if desired, sprinkle additional colored sprinkles for an extra festive look.
10. Cut into bars and serve.
• For an extra touch, you can drizzle a simple icing (made by mixing powdered sugar with a little milk and vanilla extract) over the bars before adding the Easter eggs.
