Description

This Easy Creamy Cauliflower Mashed Potatoes recipe is a delicious and healthy alternative to traditional mashed potatoes. Made with tender cauliflower, butter, and a touch of cream, it’s a smooth, flavorful, and low-carb side dish perfect for any meal!

Ingredients

Units Scale
  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons butter (or olive oil for a dairy-free option)
  • 2 tablespoons heavy cream (or milk for a lighter option)
  • 2 cloves garlic, minced (optional for extra flavor)
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and black pepper, to taste
  • 1/2 teaspoon dried thyme or chives (for garnish)

Instructions

  • Steam the cauliflower: Bring a pot of water to a boil and steam the cauliflower florets for 8-10 minutes until very tender. Drain well.
  • Mash or blend: Transfer the cauliflower to a food processor or use a hand masher. Add butter, cream, and garlic. Blend until smooth.
  • Season to taste: Stir in salt, black pepper, and Parmesan cheese (if using). Mix well.
  • Garnish and serve: Sprinkle with thyme or chives and serve hot!

Notes

  • For a vegan version, substitute butter with olive oil and cream with coconut milk.
  • For extra creaminess, add an additional tablespoon of cream or a dollop of cream cheese.
  • For more flavor, mix in roasted garlic or a pinch of nutmeg.
