Enjoy a healthier twist on a Southern classic with these Easy Oven-Fried Green Tomatoes! Crispy on the outside and tender on the inside, these tomato slices are lightly seasoned and baked to golden perfection. Perfect as an appetizer or a side dish, they pair wonderfully with a zesty dipping sauce.


Ingredients

For the Tomatoes:

  • 4 large green tomatoes, sliced 1/4-inch thick
  • Salt and pepper, to taste

For the Breading Station:

  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp paprika (optional)

For Baking:

 

  • Cooking spray or a light drizzle of olive oil

Instructions

  • Preheat & Prepare: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Season Tomatoes: Lay out the tomato slices on a plate and lightly season both sides with salt and pepper.
  • Set Up Breading Station:
    • Place flour in a shallow dish.
    • Beat the eggs in a second dish.
    • Combine panko breadcrumbs with garlic powder and paprika in a third dish.
  • Bread the Tomatoes:
    • Dredge each tomato slice in the flour, shaking off any excess.
    • Dip into the beaten eggs, allowing any excess egg to drip off.
    • Coat evenly with the breadcrumb mixture, pressing gently to adhere.
  • Bake:
    • Arrange the breaded slices on the prepared baking sheet.
    • Lightly spray with cooking spray or drizzle with a bit of olive oil.
    • Bake for 20–25 minutes, flipping halfway through, until the tomatoes are crisp and golden.

 

  • Serve:
    • Remove from the oven and let cool slightly before serving. Enjoy with your favorite dipping sauce!

Notes

For extra crunch, you can substitute part of the panko with cornmeal.

Experiment with additional spices like cayenne pepper for a little heat.

Best served immediately while still warm and crispy.
