A hearty, one-pot dinner featuring tender beef stew meat, egg noodles, and a rich, creamy French onion sauce. Enhanced with French onion soup and beef broth, this dish delivers a delicious blend of caramelized onions and savory beef – perfect for warming up on chilly evenings.

Beef and Sauce:

  • 2 tablespoons olive oil
  • 1 pound beef stew meat (cut into cubes)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 (10.5-ounce) can condensed French onion soup
  • 2 to 2 1/2 cups beef broth

Noodles and Finish:

 

  • 12 ounces egg noodles
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1 cup crispy French fried onions
  • 2 tablespoons chopped fresh parsley (plus extra for garnish)

Instructions

  • Brown the Beef:
    Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat, season with garlic powder, onion powder, salt, and pepper, and sear until browned on all sides (about 3-5 minutes).

  • Build the Sauce:
    Add the French onion soup and beef broth to the pot. Bring the mixture to a simmer and allow the beef to cook for about 10 minutes until it starts to become tender.

  • Cook the Noodles:
    Stir in the egg noodles, making sure they are submerged in the liquid. Increase the heat to bring the pot to a boil, then reduce to a simmer and cook for another 7-10 minutes, or until the noodles are tender and have absorbed much of the liquid.

  • Finish the Dish:
    Remove the pot from heat. Stir in the sour cream and grated Parmesan cheese until well combined, creating a creamy sauce. Top with crispy French fried onions and sprinkle with chopped parsley.

 

  • Serve:
    Spoon the dish into bowls while hot. Optionally, garnish with additional parsley and extra fried onions for crunch.

Notes

  • For even richer flavor, allow the beef to simmer slightly longer to become more tender.
  • You can adjust the amount of beef broth if you prefer a saucier consistency.
  • The dish is perfect as a weeknight dinner and also works well for leftovers.
