Ingredients

Units Scale
  • 2 tablespoons olive oil (or butter)
  • 1 head cauliflower, cut into florets
  • 8 ounces (225g) mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried thyme (or Italian seasoning)
  • Salt and black pepper, to taste
  • 1/4 cup vegetable or chicken broth
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  • Heat olive oil (or butter) in a large skillet over medium heat.
  • Add the cauliflower florets and sauté for about 5 minutes, stirring occasionally.
  • Add the sliced mushrooms and continue cooking for another 5 minutes until mushrooms release their moisture.
  • Stir in the minced garlic, red pepper flakes, and thyme. Cook for about 1 minute until fragrant.
  • Pour in the vegetable or chicken broth, cover the skillet, and let cook for 3-4 minutes until the cauliflower is tender but still slightly crisp.
  • Uncover, season with salt and black pepper to taste. Let any remaining liquid evaporate.
  • Sprinkle with Parmesan cheese (if using) and chopped parsley before serving.
  • Serve hot and enjoy!

Notes

  • For extra flavor, add a splash of lemon juice before serving.
  • For a creamy version, stir in a tablespoon of heavy cream or cream cheese.
  • Make it vegan by omitting Parmesan or using nutritional yeast.
