Ingredients

– 1 1/2 pounds ground chicken

– 1/2 cup breadcrumbs

– 1/2 cup grated Parmesan cheese

– 1/2 cup shredded mozzarella cheese (plus extra for topping)

– 3 cloves garlic, minced

– 1 egg

– 1/4 cup milk

– 1 tablespoon fresh parsley, chopped

– 1 teaspoon Italian seasoning

– Salt and freshly ground black pepper, to taste

– 2 tablespoons olive oil

– Optional: Additional mozzarella cheese for topping

Instructions

1. **Preheat the Oven:**

– Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

 

2. **Prepare the Meatloaf Mixture:**

– In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, shredded mozzarella cheese, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and black pepper. Mix until just combined; avoid overmixing to prevent a dense texture.

 

3. **Shape and Bake:**

– Transfer the mixture to the prepared baking sheet, shaping it into a loaf. Alternatively, press the mixture into a loaf pan. Drizzle the olive oil over the top to promote a golden crust.

– Bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is firm to the touch.
