These Garlic Steak & Potato Foil Packets are a simple, flavorful dinner that’s perfect for grilling or baking. With tender steak, savory garlic butter, and crispy potatoes, this recipe makes cleanup a breeze!

Ingredients

  • 2 boneless ribeye or sirloin steaks (68 oz each)
  • 4 small potatoes, cut into cubes
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat your grill to medium-high heat (or preheat your oven to 400°F/200°C).
  • In a small bowl, mix together olive oil, melted butter, minced garlic, thyme, rosemary, salt, pepper, and paprika.
  • Cut four large pieces of aluminum foil. Place an equal portion of cubed potatoes in the center of each piece of foil.
  • Drizzle a spoonful of the garlic butter mixture over the potatoes, then place one steak on top of each pile of potatoes.
  • Fold the edges of the foil over the steak and potatoes to form a packet, ensuring it’s tightly sealed.
  • Grill the packets for about 20-25 minutes, flipping halfway through (or bake in the oven for 25-30 minutes).
  • Carefully open the foil packets, garnish with fresh parsley, and serve immediately.

Notes

  • For a more intense garlic flavor, feel free to add extra minced garlic or garlic powder.
  • You can also add vegetables such as bell peppers, onions, or mushrooms to the foil packets.
  • Be sure to check the steak for your preferred doneness by using a meat thermometer (130°F for medium-rare, 140°F for medium).
