This Greek Yogurt Chicken Salad is a healthier twist on the classic recipe, using creamy Greek yogurt instead of mayonnaise. Packed with lean protein, crunchy vegetables, and delicious seasonings, it’s perfect for a light lunch or meal prep.

 

Ingredients

– 2 cups cooked chicken breast, shredded or diced

– 1/2 cup plain Greek yogurt

– 1/4 cup celery, finely chopped

– 1/4 cup red onion, finely chopped

– 1/4 cup grapes, halved (or dried cranberries)

– 1/4 cup almonds or walnuts, chopped

– 1 tsp Dijon mustard

– 1 tsp lemon juice

– 1/2 tsp garlic powder

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 tbsp fresh parsley, chopped (optional)

Instructions

1. In a large mixing bowl, combine the Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and black pepper. Mix well.

2. Add the cooked chicken, celery, red onion, grapes, and nuts to the bowl. Stir until everything is well coated with the yogurt dressing.

3. Taste and adjust seasoning as needed.

4. Garnish with fresh parsley, if using.

5. Serve chilled on a sandwich, in a wrap, over a salad, or enjoy as is.

 

Notes

– Store in an airtight container in the refrigerator for up to 3 days.

– You can substitute rotisserie chicken for convenience.

– Add more lemon juice or Greek yogurt for a creamier texture.

– Serve with whole-grain bread, crackers, or lettuce wraps for a low-carb option.
