Grilled Shrimp Caesar Wraps are a fresh and flavorful handheld meal made with juicy grilled shrimp, crisp romaine lettuce, creamy Caesar dressing, and Parmesan cheese, all wrapped in a soft tortilla. Perfect for a quick lunch or light dinner.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 2 cups chopped romaine lettuce
  • 1/3 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cherry tomatoes, halved (optional)
  • Lemon wedges (for serving)

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper.
  3. Grill shrimp for 2-3 minutes per side, or until pink and cooked through. Remove and set aside.
  4. In a large bowl, mix chopped romaine with Caesar dressing, Parmesan cheese, and cherry tomatoes if using.
  5. Warm the tortillas slightly to make them pliable.
  6. Divide the Caesar salad mix among the tortillas, top with grilled shrimp, and wrap tightly.
  7. Slice in half and serve with lemon wedges on the side.

Notes

  • You can substitute grilled chicken or tofu for shrimp if desired.
  • Add croutons for extra crunch, but add just before serving to avoid sogginess.
  • Use whole wheat or low-carb tortillas for a healthier version.
  • Shrimp can be marinated up to 30 minutes for extra flavor.
