This comforting classic features seasoned hamburger steaks served smothered in a rich, savory onion gravy. Perfect for a hearty dinner, these hamburger steaks are pan-fried until golden brown and then simmered in a luscious gravy made with caramelized onions, beef broth, and a touch of Worcestershire sauce. For the Hamburger Steaks:

  • 1 lb ground beef (80/20 for extra flavor)
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for frying)

For the Onion Gravy:

 

  • 2 tablespoons unsalted butter
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme (or rosemary)
  • Salt and pepper, to taste

Instructions

  • Make the Hamburger Steaks:
    In a large bowl, combine ground beef, chopped onion, egg, breadcrumbs, Worcestershire sauce, salt, and pepper. Mix gently until just combined. Form the mixture into 4 equal patties.

  • Cook the Steaks:
    Heat olive oil in a large skillet over medium-high heat. Add the hamburger steaks and cook for about 4–5 minutes per side until nicely browned. Remove the steaks from the skillet and set aside on a plate.

  • Prepare the Onion Gravy:
    In the same skillet, lower the heat to medium and melt the butter. Add the sliced onions and cook, stirring frequently, until they begin to soften and caramelize (about 8–10 minutes). Add the minced garlic and cook for another minute.

  • Thicken the Gravy:
    Sprinkle the flour over the onions, stirring constantly for 1–2 minutes to form a roux. Gradually pour in the beef broth while stirring to avoid lumps. Add Worcestershire sauce and dried thyme, then season with salt and pepper.

 

  • Simmer and Serve:
    Bring the gravy to a simmer and cook for about 3–4 minutes until thickened. Return the hamburger steaks to the skillet, spooning some gravy over them. Let everything heat through for another 2 minutes before serving.


Notes

  • For extra flavor, let the hamburger steaks rest for a few minutes after forming them to help them hold together during cooking.
  • Adjust the consistency of the gravy by adding a bit more beef broth if needed.
