These Hawaiian BBQ Chicken and Pineapple Foil Packets are a delicious and easy dinner option, packed with sweet and smoky flavors. Juicy chicken, tangy barbecue sauce, and fresh pineapple come together in a convenient foil packet, perfect for grilling or baking!

 

Ingredients

**For the Foil Packets:**

– 4 boneless, skinless chicken breasts (about 500g)

– 200g fresh pineapple chunks (about 1 cup)

– 1 red bell pepper, sliced

– 1 yellow bell pepper, sliced

– 1 small red onion, sliced

– 4 tablespoons barbecue sauce

– 2 tablespoons soy sauce

– 1 tablespoon olive oil

– 1 teaspoon garlic powder

– 1/2 teaspoon paprika

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 tablespoon chopped fresh cilantro (for garnish)

**For Serving (Optional):**

– Cooked white rice or coconut rice

– Lime wedges

Instructions

**Prepare the Foil Packets:**

1. Preheat the oven to 200°C (400°F) or heat a grill to medium-high.

2. Cut four large pieces of aluminum foil (about 12×12 inches each).

3. In a small bowl, mix the barbecue sauce, soy sauce, olive oil, garlic powder, paprika, salt, and pepper.

 

**Assemble the Packets:**

4. Place one chicken breast in the center of each foil sheet.

5. Brush each chicken breast with the barbecue sauce mixture.

6. Top with pineapple chunks, sliced bell peppers, and red onion.

7. Drizzle any remaining sauce over the ingredients.

 

**Seal and Cook:**

8. Fold the foil over the chicken and vegetables, sealing the edges tightly to create a packet.

9. Bake in the oven for 25-30 minutes or grill over medium-high heat for 15-20 minutes, until the chicken reaches an internal temperature of 75°C (165°F).

 

**Serve:**

10. Carefully open the foil packets, allowing the steam to escape.

11. Garnish with fresh cilantro and serve with rice and lime wedges. Enjoy!

 

Notes

For extra smoky flavor, use a charcoal grill instead of the oven. You can also add a sprinkle of red pepper flakes for a bit of heat!
