Ingredients

– 2 cups fresh pineapple, chopped and pureed

– 1 can (13.5 oz) full-fat coconut milk

– 1/2 cup granulated sugar

– 2 tablespoons cornstarch

– 1/4 teaspoon salt

– 1 teaspoon vanilla extract

– Toasted coconut flakes (for garnish)

Instructions

1. In a small bowl, mix the cornstarch with 1/4 cup of pineapple puree to create a smooth slurry.

2. In a medium saucepan, combine the coconut milk, remaining pineapple puree, sugar, and salt. Bring to a gentle simmer over medium heat.

3. Stir in the cornstarch slurry and continue to cook, stirring constantly until the mixture thickens (about 5-7 minutes).

4. Remove from heat and stir in the vanilla extract.

5. Pour the mixture into serving dishes and allow it to cool to room temperature.

6. Refrigerate for at least 2 hours before serving.

7. Garnish with toasted coconut flakes just before serving.

– For a smoother texture, strain the pineapple puree before using.

– Adjust the sugar based on the natural sweetness of your pineapple.
