- 1/2 tsp almond extract (optional, for extra nutty flavor)

Instructions
- Blend the base: In a blender, combine cottage cheese (or Greek yogurt), almond milk, protein powder, honey, almond extract, vanilla extract, and salt. Blend until smooth.
- Add pistachios: Stir in the finely chopped pistachios, reserving some for topping.
- Freeze: Pour the mixture into a container and freeze for about 2-3 hours, stirring every 30 minutes to prevent ice crystals.
- Serve: Once firm, scoop and enjoy! Garnish with extra pistachios if desired
