Ingredients

  • 1 1/2 cups cottage cheese or Greek yogurt
  • 1/2 cup unsweetened almond milk (or regular milk)
  • 1/4 cup vanilla or pistachio-flavored protein powder
  • 1/2 cup shelled pistachios, finely chopped
  • 3 tbsp honey or maple syrup
  • 1/2 tsp almond extract (optional, for extra nutty flavor)
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions

  • Blend the base: In a blender, combine cottage cheese (or Greek yogurt), almond milk, protein powder, honey, almond extract, vanilla extract, and salt. Blend until smooth.
  • Add pistachios: Stir in the finely chopped pistachios, reserving some for topping.
  • Freeze: Pour the mixture into a container and freeze for about 2-3 hours, stirring every 30 minutes to prevent ice crystals.
  • Serve: Once firm, scoop and enjoy! Garnish with extra pistachios if desired
