These Homemade Hamburger Peppers and Onion Gyros are a flavorful fusion of seasoned ground beef, sautéed bell peppers, and onions, all wrapped in warm pita bread. Topped with crumbled blue cheese and sour cream, they offer a satisfying and unique twist on traditional gyros.

Ingredients

**For the Meat Mixture:**

– 3 teaspoons olive oil

– 1 1/2 pounds lean ground beef

– 1 cup red bell pepper, chopped

– 1 cup green bell pepper, chopped

– 1 cup yellow onion, chopped

– 1 can (10 oz) Rotel diced tomatoes with green chilies, drained

– Salt and pepper to taste

**For Assembly:**

– 4 pita breads, warmed

– 1/2 cup sour cream

– 1/4 cup crumbled blue cheese

Instructions

1. **Cook the Meat and Vegetables:**

– Heat olive oil in a large skillet over medium-high heat.

– Add ground beef, chopped red and green bell peppers, and chopped onions to the skillet.

– Cook until the beef is browned and vegetables are softened, about 7-10 minutes.

– Drain excess fat if necessary and season with salt and pepper to taste.

– Stir in the drained Rotel tomatoes with green chilies and mix well. Let the mixture simmer for 2-3 minutes to combine flavors.

 

2. **Assemble the Gyros:**

– Lay out four sheets of aluminum foil on a flat surface.

– Place a warmed pita bread on each sheet.

– Spoon a quarter of the meat and vegetable mixture onto the center of each pita.

– Fold the sides of the pita over the filling and wrap it tightly using the aluminum foil.

 

3. **Serve:**

– Garnish each gyro with a tablespoon of sour cream and a sprinkle of crumbled blue cheese.

– Serve immediately while warm.

Notes

For a spicier kick, consider using the hot variety of Rotel diced tomatoes with green chilies.

If preferred, substitute ground beef with ground lamb for a more traditional gyro flavor.

These gyros can be customized with additional toppings such as lettuce, tomatoes, or cucumbers.

 

Leftover meat mixture can be stored in an airtight container in the refrigerator for up to 3 days.
