Homemade Potato Chips are crispy, golden, and perfect for snacking. Made with fresh potatoes and a simple seasoning, these chips are healthier and more flavorful than store-bought ones.

  • 4 large potatoes (russet or Yukon Gold)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/4 teaspoon garlic powder (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Wash and peel the potatoes, then slice them thinly using a mandoline slicer or a sharp knife. Aim for uniform thickness for even cooking.
  3. Place the sliced potatoes in a large bowl of water and let them soak for 15-20 minutes to remove excess starch. Drain and pat the slices dry with paper towels.
  4. In a clean bowl, toss the potato slices with olive oil, salt, pepper, and optional paprika and garlic powder until evenly coated.
  5. Arrange the potato slices in a single layer on the prepared baking sheets, making sure they don’t overlap.
  6. Bake for 20-25 minutes, flipping the chips halfway through, until they are golden brown and crispy. Keep an eye on them toward the end to avoid burning.
  7. Remove from the oven and let the chips cool on a wire rack to crisp up further.
  8. Garnish with fresh herbs if desired, and serve immediately or store in an airtight container for up to 3 days.

Notes

  • For extra crispy chips, bake them in batches, avoiding overcrowding the baking sheet.
  • You can experiment with different seasonings like chili powder, parmesan, or rosemary for added flavor.
  • If you prefer frying, heat oil to 350°F (175°C) and fry the potato slices in batches until golden and crispy, then drain on paper towels.
