Buttery, melt-in-your-mouth cookies featuring a signature thumbprint filled with your favorite fruit jam. A delightful treat perfect for teatime, holidays, or anytime you crave a little sweetness.

 

Ingredients

– 1 cup unsalted butter, softened

– 2/3 cup granulated sugar

– 1 large egg yolk

– 1 tsp vanilla extract

– 2 cups all-purpose flour

– 1/4 tsp salt

– 1/2 cup fruit jam (such as raspberry or strawberry)

Instructions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. Mix in the egg yolk and vanilla extract until well combined.

4. Gradually add the flour and salt, stirring until a soft dough forms.

5. Scoop tablespoon-sized portions of dough and roll them into balls. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

6. Using your thumb or the back of a small spoon, gently press a well in the center of each ball to create a thumbprint.

7. Fill each indentation with about 1/2 teaspoon of your chosen jam.

8. Bake in the preheated oven for 12-15 minutes, or until the edges are just beginning to turn lightly golden.

9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

– For variation, try using different types of jam to match your taste or the season.

– Ensure you don’t overbake the cookies to keep them soft and tender in the center.

– These cookies can be stored in an airtight container at room temperature for up to a week.
