1lb ground beef (or a mix of beef and pork)
1/4cup panko breadcrumbs
1/4cup grated carrot
1/4cup chopped green onions
1 egg
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp minced garlic
1 tbsp ginger, grated
1 tbsp brown sugar
1/4 tsp black pepper
1/4cup gochujang (Korean chili paste)
1/4cup soy sauce (for the glaze)
1 tbsp honey
1 tbsp rice vinegar
2 tbsp ketchup
1 tbsp sesame seeds (for garnish)
2 tbsp mayo
1 tbsp sriracha sauce (for the spicy mayo)
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, mix together ground beef, panko breadcrumbs, grated carrot, chopped green onions, egg, soy sauce, sesame oil, garlic, ginger, brown sugar, and black pepper until well combined.
Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 15-18 minutes or until cooked through and browned.
While the meatballs are baking, make the Korean BBQ glaze by combining gochujang, soy sauce, honey, rice vinegar, and ketchup in a small saucepan. Bring to a simmer over medium heat and cook for 3-4 minutes until the glaze thickens slightly.
In a small bowl, mix mayo and sriracha sauce to create the spicy mayo sauce.
Once the meatballs are done, transfer them to a large bowl and toss them with the BBQ glaze until evenly coated.
Serve the meatballs with a drizzle of spicy mayo on top, garnished with sesame seeds and extra green onions if desired.
Notes
Serve with steamed rice or a side of vegetables for a complete meal.
Adjust the level of spiciness in the spicy mayo sauce by adding more or less sriracha according to your preference.
You can also grill the meatballs for extra flavor and a smoky touch.
