Savory and tender meatballs with a sweet and spicy Korean BBQ glaze, served with a creamy spicy mayo sauce for a delicious fusion dish.

Ingredients

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/4 cup panko breadcrumbs
  • 1/4 cup grated carrot
  • 1/4 cup chopped green onions
  • 1 egg
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp minced garlic
  • 1 tbsp ginger, grated
  • 1 tbsp brown sugar
  • 1/4 tsp black pepper
  • 1/4 cup gochujang (Korean chili paste)
  • 1/4 cup soy sauce (for the glaze)
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 tbsp ketchup
  • 1 tbsp sesame seeds (for garnish)
  • 2 tbsp mayo
  • 1 tbsp sriracha sauce (for the spicy mayo)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together ground beef, panko breadcrumbs, grated carrot, chopped green onions, egg, soy sauce, sesame oil, garlic, ginger, brown sugar, and black pepper until well combined.
  3. Form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 15-18 minutes or until cooked through and browned.
  5. While the meatballs are baking, make the Korean BBQ glaze by combining gochujang, soy sauce, honey, rice vinegar, and ketchup in a small saucepan. Bring to a simmer over medium heat and cook for 3-4 minutes until the glaze thickens slightly.
  6. In a small bowl, mix mayo and sriracha sauce to create the spicy mayo sauce.
  7. Once the meatballs are done, transfer them to a large bowl and toss them with the BBQ glaze until evenly coated.
  8. Serve the meatballs with a drizzle of spicy mayo on top, garnished with sesame seeds and extra green onions if desired.

Notes

  • Serve with steamed rice or a side of vegetables for a complete meal.
  • Adjust the level of spiciness in the spicy mayo sauce by adding more or less sriracha according to your preference.
  • You can also grill the meatballs for extra flavor and a smoky touch.
