A moist, buttery pound cake with a tangy key lime twist, topped with a sweet and zesty key lime glaze. Perfect for summer gatherings or special occasions.

 

Ingredients

For the Cake:

– 2 1/2cups all-purpose flour

– 2 1/2tsp baking powder

– 1/2tsp salt

– 1cup unsalted butter, softened

– 1 1/2cups granulated sugar

– 4eggs

– 1/2cup sour cream

– 1/4cup fresh key lime juice

– 2tbsp key lime zest

– 1tsp vanilla extract

For the Glaze:

– 1cup powdered sugar

– 2tbsp fresh key lime juice

– 1tbsp milk

Instructions

1. Preheat the oven to 325°F(165°C). Grease and flour a 9x5inch loaf pan.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

4. Beat in the eggs one at a time, then stir in the vanilla extract and key lime zest.

5. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream and key lime juice. Start and finish with the dry ingredients.

6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

7. Bake for 60-70minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the cake to cool in the pan for 10minutes, then transfer to a wire rack to cool completely.

9. To make the glaze, whisk together the powdered sugar, key lime juice, and milk until smooth.

10. Drizzle the glaze over the cooled pound cake, letting it drip down the sides.

 

Notes

– For an extra burst of lime flavor, you can add additional key lime zest to the glaze.

– This cake is perfect for serving with a cup of tea or as a dessert for a summer gathering.

– The glaze can be made ahead of time and stored in the fridge until ready to use.
