These Lazy Day Lemon Cream Pie Bars are a quick and easy version of the classic lemon pie. With a buttery graham cracker crust, creamy lemon filling, and a light whipped topping, these bars are the perfect balance of sweet and tangy. Ideal for when you want a refreshing dessert without the hassle!  

Ingredients

– **Crust:**

– 1 1/2 cups graham cracker crumbs

– 1/4 cup granulated sugar

– 1/3 cup unsalted butter, melted

– **Filling:**

– 1 package (8 oz) cream cheese, softened

– 1 can (14 oz) sweetened condensed milk

– 1/4 cup fresh lemon juice

– 2 tsp lemon zest

– 1/2 tsp vanilla extract

– **Topping:**

– 1 cup heavy whipping cream

– 2 tbsp powdered sugar

– 1/2 tsp vanilla extract

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.  

2. For the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form an even crust.  

3. Bake the crust for 10 minutes, then remove from the oven and let it cool.  

4. For the filling: In a mixing bowl, beat together the cream cheese, sweetened condensed milk, lemon juice, lemon zest, and vanilla extract until smooth and creamy.  

5. Pour the filling over the cooled crust and spread it evenly.  

6. Refrigerate the bars for at least 3 hours or overnight until set.  

7. For the topping: In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.  

8. Spread the whipped cream topping over the lemon filling.  

9. Slice into bars and serve. Enjoy!  

Notes

– Make sure to refrigerate the bars long enough for the filling to set properly.  

– You can substitute lime juice for lemon for a twist on the flavor.  

– If you want a firmer crust, press it more firmly into the pan before baking.  

– These bars can be topped with fresh berries for an extra touch.
