1 small box instant lemon pudding

3 1/2 cups quick oats

1 tsp vanilla extract


Instructions

  • Prepare the Base Mixture:
  • In a large saucepan, combine the sugar, butter, and milk over medium heat. Stir occasionally until the butter melts and the mixture comes to a boil.
  • Boil the Mixture:
  • Let the mixture boil gently for 5 minutes, stirring occasionally to prevent burning.
  • Add Flavorings:
  • Remove the saucepan from heat. Stir in the vanilla extract, then whisk in the instant lemon pudding until the mixture is smooth.
  • Incorporate the Oats:
  • Stir in the quick oats until fully combined. The mixture will thicken as the oats absorb the liquid.
  • Shape the Cookies:
  • Drop spoonfuls of the mixture onto a cookie sheet lined with wax paper. Space them out evenly to avoid sticking together.
  • Cool and Store:
  • Allow the cookies to cool completely at room temperature before removing them from the wax paper. Store in an airtight container at room temperature or in the refrigerator for up to 1 week.

Notes

For extra lemon flavor, add a teaspoon of lemon zest to the mixture after removing it from heat.
