– 12 oz pasta (spaghetti, penne, or fettuccine)
– 1 cup ricotta cheese
– 2 cups fresh spinach, chopped
– 1 lemon (zested and juiced)
– 2 cloves garlic, minced
– 1/2 cup grated Parmesan cheese
– 2 tbsp olive oil
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/4 tsp red pepper flakes (optional)
– 1/4 cup pasta water (reserved)
1. Cook the pasta according to the package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
2. In a large skillet, heat olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
3. Add the chopped spinach and cook for 2-3 minutes until wilted.
4. In a bowl, whisk together ricotta cheese, lemon zest, lemon juice, salt, black pepper, and red pepper flakes (if using).
5. Add the cooked pasta to the skillet with the spinach and garlic.
6. Stir in the ricotta mixture and the reserved pasta water, mixing until creamy and well combined.
7. Remove from heat and toss in grated Parmesan cheese.
8. Serve immediately, garnished with additional Parmesan and lemon zest if desired.
